Glad you're enjoying the practices, Frederike!
In finding your edge in a pose, look for a deep stretch where you're still able to relax for the entire amount of time in the pose. If a percentage is helpful, some teachers say to do 70% - which would mean that once you hit your maximum stretch, dial it back by 30%. This can be helpful but is also very subjective, since one person's 70% can be very different from another person's!
